Banana Walnut Quinoa Bars- Vegan and Gluten Free

Here is the recipe for my delicious and healthy banana walnut quinoa bars. Its so easy to prepare, and can be enjoyed fresh out of the oven or stored in the fridge for a quick on the go snack or meal!

  • 2 cups cooked quinoa (prepare according to package)
  • 2 medium sized ripe bananas (mashed)
  • 1 tsp pure vanilla extract
  • 1/4 cup maple syrup
  • 2 flax eggs (2 tbs ground flax meal with 5 tbs of water for 15 minutes)
  • 2 tsp cinnamon
  • 1/2 cup Bob's red mill gluten free all purpose baking flour
  • 1 tsp baking powder
  • 1 cup walnuts


  • Preheat your oven to 375 degrees F
  • Line an 8x8 baking dish with parchment paper
  • Mix together the cooked quinoa, mashed bananas, walnuts, maple syrup, vanilla, flax eggs, and cinnamon in a medium bowl until well incorporated. 
  • In a small bowl, combine the flour and baking powder.
  • Add the flour mixture into the quinoa mixture and stir well.
  • Spread evenly into your baking dish.
  • Bake for 30-32 minutes
  • Enjoy warm out of the oven or cold. Top your banana walnut quinoa bake with maple cream, fresh fruit, granola, etc.
