Raw Cinnamon Cacao Energy Balls
These raw cinnamon cacao energy balls are a delicious addition to your weekly meal prep. They are no-bake and very easy to prepare!
- 1.5 cups mixed nuts (I prefer almonds, cashews, and pecans)
- 1 tbsp chia seeds
- 1/3 cup gluten free oats
- 2 cups pitted dates
- 2 tbsp cacao powder
- 1 tsp cinnamon
- 1/2 tsp pure vanilla extract
Food process the nuts and the chia seeds on high for about 1 minute
Add in the cacao, cinnamon, and vanilla and food process for another minute
Add in the dates and oatmeal and process until a sticky consistency forms with everything well incorporated (about 2-3 minutes)
Roll into balls. At this point, you can either coat in coconut, crushed nuts, or just enjoy them plain!
Store in the fridge in an air tight container. They will stay fresh for at least a week in the fridge or they freeze well up to 3 months.
