Fig and Apricot Flatbreads with fresh greens! This Fig and Apricot Flatbreads with fresh greens! This is such an easy and delicious snack or appetizer to prepare in 10 minutes or less! 
-Recipe-
Flatbread crust or pita (@uglysglutenfree has a delicious crust )
Apricot jam, spread or compote.
Fresh greens 
Fresh figs or other fresh fruit of your choice
Optional add ons- almonds, walnuts and pecans taste delicious and a soft cheese or vegan cheese. @treelinecheese has been our go to. 
-Directions-
Spread a thin layer of apricot jam over your cooked flatbread or toasted pita. 
Top with a thin layer of greens and add your other toppings! 
Enjoy!

-Recipe-
Preheat your oven to 425 degrees F
thinly slice your potatoes, but leave the entire bottom in tact. 
Brush olive oil over each potato and sprinkle some sea salt and pepper on top. 
Add in thinly sliced garlic between some slices of the potato (optional) 
Bake for 30 minutes 
Brush on more olive oil and bake for another 20-30 minutes or until the crispness you prefer! 
Enjoy!

Toasted Coconut no bake cookies! If you’re a Gir Toasted Coconut no bake cookies! If you’re a Girl Scout cookie fan, these will definitely satisfy your craving....only they’re MUCH healthier 😋 I’ve had these on my blog for years but love sharing them every now and then! The recipe is so easy, and they taste delicious. I hope you try them!
Recipe 
1 cup of toasted coconut flakes (I toast it in my toaster oven. Be sure to check and stir constantly) 
1 cup of pitted medjool dates 
½ of a 75-90% dark chocolate bar 
¼ tsp coconut oil 
¼ cup of roasted unsalted almonds (optional) 

-Add the toasted coconut and the dates to your food processor. 
-Process these 2 ingredients on high until dough is formed. 
-Remove the dough from your food processor and roll into even balls. I usually make 10-12.
-Flatten each ball, and make a small hole with your finger in the middle. Shape the cookie to look like a tiny donut. 
-Put all of your finished cookies on a tray with parchment paper. Freeze while you prepare the chocolate
-Melt your chocolate and coconut oil in a microwave safe bowl. Break up the chocolate first and melt it in 20 second increments. Stir each time until everything is evenly melted and combined. 
-Take the cookies out of the freezer and drizzle with the chocolate. I use a spoon to drizzle the chocolate evenly. If you love chocolate as much as I do, you can first dip the bottoms in the chocolate and place back on the parchment paper.
-Place the cookies back in the freezer for a few minutes and Enjoy!

Garlic, Apricot and Sesame Noodle Bowl! This recip Garlic, Apricot and Sesame Noodle Bowl! This recipe was really popular last week, so I’m sharing it again! The ingredients are all the same, however I added broccoli to this bowl as well. Feel free to switch up the veggies to whatever you enjoy best! Have a wonderful Monday🥰
-Ingredients-
-1 package of rice noodles (cooked according to the package) We use @lotusfoods brown pad thai rice noodles. Toss with a little olive oil and set aside. 
-1 tbsp olive oil 
-2 cloves of garlic (minced)
-1 onion (chopped) 
-10 stalks of asparagus (chopped)
-1 small head of broccoli (chopped,tossed in olive oil and roasted in the oven at 400 degrees until it gets a little crispy)
-Tofu tenders (recipe 21 posts back 😂 I’ll post this again soon) Or just sautéed tofu. 
Sauce Ingredients
-2 cloves of garlic 
1/4 cup of apricot jam 
1.5-2 tbsp soy sauce 
1 tsp sesame seeds 
Combine these 4 ingredients in a small saucepan. Warm up over a medium/low temperature and set aside. 
Directions 
-Sauté the onions in olive oil for 5 minutes over a medium heat 
-Add in garlic and stir 
-Add in your asparagus and sauté for 5 minutes or so. 
-Add in the cooked noodles 
-Mix in your sauce until everything is well coated.
-Top with tofu and more sesame seeds (optional)
-Enjoy!

Tofu and Vegetable Dumplings served with a sesame Tofu and Vegetable Dumplings served with a sesame and garlic chili sauce 😍 These dumplings are the first post in my virtual culinary tour around the world! Who doesn’t love Chinese dumplings? The filling combinations can vary in flavor, texture, ingredients, etc. You can also make them gluten free and/or vegan very easily! This is my take on Chinese dumplings, and my family absolutely loved them! Let me know if you try the recipe! I’ll be posting a vote in my stories this week to decide on the next dish to try 🌎🤩
Vegan Tofu and Vegetable Dumplings
20-25 dumpling wrappers. Pre-made or homemade! @woon.heng and @hellolisalin both have great instructions on their blogs. 
1/2 block of @nasoya super firm tofu 
1/2 cup of your favorite mushrooms (I used baby Bella) 
1/4 large red bell pepper 
1/2 medium white onion 
2 large garlic cloves 
1 small carrot 
1/8-1/4 tsp ginger (optional) 
3/4 tsp salt 
1/4 cup shelled edamame 
1 cup spinach 
2 tsp toasted sesame oil 
Directions 
Food process all of your filling ingredients or chop veggies into tiny pieces and mix with your crumbed tofu. We preferred to food process because my kids didn’t like having chunks in their filling. Both ways taste delicious and will hold together just fine. 
Once your mixture is complete, sauté it for 5-10 minutes in another tsp or 2 of sesame oil. 
Fill each wrapper with about 1 tbsp of mixture 
Wet the perimeter of your wrappers with water, and fold how you like! I watched countless YouTube videos on folding, and eventually I found one that worked for me 😆 I still have A LOT of practice ahead of me. 
You can steam or pan fry these dumplings. I fried them in 2 tsp of sesame oil for about 3 minutes, and then added water to the pan and covered until the water evaporated. 
Choose your favorite dipping sauce and Enjoy!

Double Chocolate Pecan Breakfast Cookies 
2 cups of oats ⁣
1 tsp baking soda⁣
Pinch of sea salt ⁣
½ cup of almond flour⁣
¼ cup of cacao powder⁣
½ cup of shredded unsweetened coconut⁣
¾ cup of pecans
½ cup of chocolate chips (optional) ⁣
Stir these ingredients ⁣
2 ripe bananas (mashed) ⁣
1 tsp pure vanilla extract ⁣
¼ cup of oatmilk ⁣
⅓ cup of pure maple syrup ⁣
Mix everything together well ⁣
Let the mixture sit for 20 minutes before baking ⁣
Preheat oven to 350⁣
Line your baking sheet with parchment paper ⁣
Bake for 10-12  minutes and let them sit for a few minutes ⁣
