Peanut and miso glazed tofu bowl anyone?! So in lo Peanut and miso glazed tofu bowl anyone?! So in love with these flavors! I actually make this with almond butter due to Lily’s peanut allergy, but nothing replaces the peanut flavor if you are allergy free! 
-Recipe Time-
1/2 package of Extra firm tofu (drained, sliced and water pressed out) 
2 tbsp creamy unsalted peanut butter (almond butter or cashew butter work as well!)
1 tbsp low sodium soy sauce 
1 tsp south river white miso paste 
1 tsp @mamaoskimchi (vegan) 
1 tsp pure maple syrup 
1 tbsp sesame oil 
Water to thin 
Pour over your tofu and let it soak in for about 20 minutes 
Sauté until the tofu browns on both sides. Pour extra sauce over your veggies or noodles and enjoy!

2 large frozen bananas (very ripe always tastes best) 
½ cup of frozen wild blueberries 
¼ cup of oat milk (@oatly )
Food process for 2 minutes

My wellness goals have been simple lately (trying not to overwhelm myself with huge goals) I’ve been trying to get outside most days and increasing my movement on days I don’t feel like moving 😂 I’m also focusing on meal prepping everything over the weekend again to ensure an easy week meal wise! What are your goals for the week? Today I’m sharing my favorite comfort food lately! Toast 🤩🤩🤩 This combination was so delicious. You NEED to try it. 
Vanilla and Maple Tahini toast 
-Ingredients and Directions-
1 slice of your favorite toast
-Mix together-
1 tbsp tahini 
1/4 tsp @nielsenmassey vanilla 
1 tsp pure maple syrup @kearsargegorefarm 
-Spread tahini mixture on your toast
-Toppings-
1 tsp raspberry jam @cheshiregarden 
Fresh blackberries 
1 tsp slivered almonds 
1 tsp unsweetened coconut @bobsredmill

-Kale and Avo Salad-
Massage kale with 1 tbs olive oil, juice from 1/2 lemon, sea salt and pepper
Top your salad 
Pine nuts, avocado, pickled red onions, cherry tomatoes, and balsamic vinegar

It’s almost Friday🙌🏻 What are your weekend It’s almost Friday🙌🏻 What are your weekend plans? This week I’ve been absolutely exhausted, and I’m looking forward to spending time with family and just taking it easy. I want to test out some recipes and work on some organization. Today I’m sharing a delicious veggie Buddha bowl. This is my favorite go to meal because it’s quick, easy, and full of nutrition! 
Fill your bowl with greens
Toppings
-cucumbers 
-red and orange mini sweet peppers 
-Avocado 
-hummus
-Sliced almonds
-sliced nectarines 
-white onions
-squeeze of lemon 
-sea salt and pepper to taste
Happy first Monday of the new year! I don’t have Happy first Monday of the new year! I don’t have any big resolutions for the year but lots of small goals 😊 My kids are back in school, and I’m planning to update my blog during my kid free time. I have all of my recipes on here, but would love to transfer them over! Do you have any goals or resolutions for 2021? Here’s to a great year! 
Veggie and Cashew Noodle Bowl 
1 package of rice noodles or spaghetti (cooked according to the package and set aside) 
3 cloves of garlic (diced)
1 leek (diced) 
2 large carrots (shredded) 
¾ cup of chopped purple cabbage 
1 medium onion (diced) 
1 yellow pepper (cut into thin strips)
1 Tbsp olive oil 
1.5 tbsp gf soy sauce 
1 Tbs date syrup or pure maple syrup 
Salt and pepper to taste (add last because the soy sauce may be enough) 
Sauté onion in olive oil for 5 minutes 
Add in the leek and garlic and sauté for 3-4 minutes
Add in peppers and sauté for 5 minutes 
Add in the carrots and purple cabbage. Sauté until soft (about 4-5 more minutes.)
Add in your noodles
Drizzle your soy sauce, syrup, and more olive oil if needed. (Make sure you drizzle evenly) 
Sauté and combine well. Sometimes a fork is needed to make sure the veggies mix well with the noodles. 
Top with toasted cashews and sesame seeds
Enjoy!
Happy weekend🙌🏻 Starting our day with a big Happy weekend🙌🏻 Starting our day with a big fruit platter! This always buys me some time to decide what to make for breakfast 🥰 This week flew by. I had to just check my phone for the day🤦‍♀️How is it Saturday already? School starts again on Monday, and there’s a lot I need to accomplish before then... grocery shopping, shopping for Lilibean’s 7th birthday (Tuesday), meal prep, laundry and more. Cheers to everyone for a productive and fun first weekend of the new year!😘😘
Happy New Year’s Eve! I just spent the past hour Happy New Year’s Eve! I just spent the past hour looking through photos from this past year. Despite some very difficult times, 2020 has been full of amazing hikes, family time, delicious food, and good health for everyone overall. I hope that 2021 is a great year and a little less stressful. Sending love to this amazing community from our family😘😘 
BBQ Tofu Recipe 
.
Sauté 1 block of pressed tofu( Drained/Pressed and cut into small slices or cubes) in olive oil over medium heat until it starts to get crispy. 
In another pan..
Sauté 1 large onion (diced) in olive oil for 5 minutes 
Add in 4 cloves of garlic(small dice) 
Cook until they just start to brown. 
Add onions and garlic to the tofu 
Add in 1/2 cup of bbq sauce. We use @tessemaes 
Mix everything well and enjoy!
