Are you sticking to a budget? I am, and I want to Are you sticking to a budget? I am, and I want to show you how you can find delicious,high quality and healthy products without overspending at all! Hannaford store brands are comparable to national brands but at a lower cost, without sacrificing taste or quality. I plan our weekly meals, and am able to shop Hannaford store brands for just about everything. This week, I was really excited to try out a new recipe that I created and thought would taste amazing. We used our favorite organic whole wheat pasta which is Hannaford’s organic line called Nature’s Promise. I made a roasted red pepper and garlic pasta with roasted and sautéed veggies. It was absolutely delicious!
*Recipe Time*
-Roasted Red Pepper and Garlic Pasta-
*Ingredients (everything is a Hannaford store brand!)
1 lb Whole wheat spaghetti 
2 Tbsp Olive oil 
1 small jar of roasted red peppers (chopped) 
5 cloves of garlic (minced) 
1 medium onion (diced) 
1 red bell pepper (diced) 
1 package of spinach 
1 bunch of asparagus (ends broken off and roasted)
1 head of broccoli (trimmed, cut up, and roasted) 
1 jar of sauce (optional)
 Sea salt and pepper to taste 
*Directions 
-Cook your pasta according to the package, drain, return to pot, drizzle with oil and set aside 
-Sauté your onion in olive oil over a medium heat for 5 minutes 
-Add in your bell peppers, and cook until soft
-Add in the garlic, and cook until the garlic starts to brown.
-Add in your spinach and roasted red peppers and mix well. 
-Add salt and pepper 
-Add your veggies to your spaghetti and mix everything well. 
-Top with your roasted veggies and any protein and sauce(optional) that you like. 
-Enjoy!

Easy Vegan Oatmeal and Buckwheat Cookies Happy Su Easy Vegan Oatmeal and Buckwheat Cookies 
Happy Sunday! I hope everyone is having a great weekend so far. We’re on March vacation, and it’s so nice to have a break and enjoy some fun filled days with the kids! I’ll share our days in my stories 😊
*Recipe Time*
-Preheat your oven to 350 degrees F and line your baking sheet with parchment paper. 
*Ingredients*
1 ½ cups oats 
½ cup buckwheat flour 
1 tsp pure vanilla extract 
1 tsp cinnamon 
¼ tsp baking powder 
Pinch of sea salt 
⅓ cup chopped pecans 
½ cup maple syrup 
¼ cup coconut oil (melted) 
-Mix your dry ingredients together well. 
-Mix in with your wet ingredients until well incorporated. 
-Dough will be sticky 
-Divide your dough into 12 even cookies and flatten a bit before baking. 
-Bake for about 12-14 minutes
-Let them cool on the pan for 10 minutes, and then transfer to a cooling rack.
-If you’re dipping them in chocolate (which I highly recommend!) prepare your chocolate while they cool. 
-Either melt chocolate chips with a 1/2 tsp of coconut oil or melt your favorite chocolate bar. I melted @hukitchen hazelnut butter bar, and wow, the flavor was incredible!! I highly recommend giving this a try 😍 
-Dip each cookie, and then place in the fridge to cool. 
- These cookies keep well in an airtight container in the fridge for up to 2 weeks!
-Enjoy!

Our weekend officially started today with a snow day ❄️ ⛄️ it was over 60 degrees 2 days ago, and now we have a full blown snow storm today 🤷‍♀️ Cold weather means comfort food to me…So tonight I’m sharing a cozy pasta dish!

Creamy Mushroom and Asparagus Pasta 
.
1 pound of pasta (cooked according to the package and set aside) We used gluten free pasta
1 Tbsp olive oil 
4 cloves Garlic (diced)
1 package of white or baby Bella mushrooms (sliced and sautéed )
1 can of petite diced tomatoes 
1/2 cup oat milk 
1/2 bunch of Asparagus (sliced and sautéed)
4 tbsp garlic @treelinecheese 
1 box of spinach 
1/2 tsp salt (more to taste) 
1. Sauté garlic in olive oil for 2 minutes over a medium low heat 
2. Add in diced tomatoes and bring to a simmer 
3. Add in @treelinecheese 
4. Keep heat on low and stir gently until everything is combined. 
5. Add in sautéed mushrooms and asparagus and mix well
6. Stir in spinach. Once the spinach is wilted, it’s time to pour the sauce over your pasta. 
7.Mix well and make sure all the pasta is coated. 
8. Serve and enjoy! (I topped mine with some blanched asparagus and sea salt. Red pepper flakes would also add a delicious kick to it😋)

Matcha has so many health benefits, and I don’t even think about coffee anymore. I add a scoop of @lifewildfoods Oriental greens to my cup to boost the nutrition 😍 and it’s soooo delicious! My matcha recipe 
1 tsp matcha 
1/4 scoop of @lifewildfoods oriental greens
1 cup of unsweetened plantbased milk 
1/2 cup of water 
1 tsp pure maple syrup (optional) 
Whisk everything very well and heat over medium low heat until hot.

Happy Wellness Wednesday 😍 Today I’m sharing Happy Wellness Wednesday 😍 Today I’m sharing a delicious Thai red curry soup. It’s packed with veggies and full of nutrition! @keenonequinoa Thai Red Curry cups pair perfectly with this recipe! We’ve had some beautiful weather this week, but we’re expecting a big snowstorm on Friday again 😩 I’m ready for spring, but I’m still loving all the soups and stews!

*Recipe Time*
-Creamy Thai Red Curry Stew-
1 @keenonequinoa Thai Coconut Curry cup 
1 medium onion(finely diced) 
3-4 large cloves of garlic (chopped small) 
1 jar of Thai red curry paste 
1 can of petite diced tomatoes 
1 can of coconut cream 
1 can of unsweetened coconut milk 
6 oz of veggie broth 
1 tsp of ground sea salt (more to taste)
¼-½ tsp of fresh ground pepper 
2 medium potato’s (diced) 
2 carrots (chopped)
1 sweet potato (diced) 
1 red pepper (cut into slices) 
1 yellow pepper (cut into slices) 
7-10 stalks of asparagus (ends trimmed off and then cut into bite sized pieces) or 1 cup of chopped green beans 
½ cup of zucchini (sliced or diced) 
1 tsp-1 tbsp red pepper flakes 

In a large saucepan 
Sauté the onions in olive oil for about 5-7 minutes until they start to brown. 
Add in the garlic and sauté for one minute 
Add in the red curry paste
Mix until well incorporated 
Add in the tomatoes and let them simmer for a few minutes(stirring occasionally)
Add in the coconut milk and the coconut cream 
Mix until combined and bring to a simmer 
Add salt
Add in the veggie broth and simmer again 
Add in all the veggies
Let the soup simmer for 30-60 minutes with the cover on (stirring occasionally)
Top with a scoop of @keenonequinoa Thai Coconut Curry quinoa and enjoy!

Today is almost 50 degrees and ☀️ , so it’s basically summer right?! I’m having some serious summer time cravings right now, and this superfood nicecream is one of them 🤩🤩
*Recipe Time* 
Superfood Mint Chip Nicecream 
1 cup of spinach
½ cup plant milk 
¼-½ scoop of @lifewildfoods Oriental Greens 
Food process or blend until the greens turn the milk green
Add in 4 broken up frozen bananas and process until soft serve consistency. 
Add 2 drops of peppermint essential oil (add more if needed) 
You can also use a peppermint extract instead of essential oil, but you may need to experiment with the amount. 
Add in your favorite chocolate chips or chocolate bar.
Enjoy!

Kale and White Bean Soup 🥣 Happy Wellness Wedne Kale and White Bean Soup 🥣 Happy Wellness Wednesday! Today I’m sharing a delicious recipe using @keenonequinoa cups 😍 I love quinoa, so I couldn’t wait to try these plantbased organic combos! Today I used the garden medley, and it paired perfectly with my soup. I always add a grain or pasta to my soups, and this was a perfect choice! So easy to make, perfect consistency, and super flavorful! 
*Recipe Time*
1 large onion (diced)
6 cloves of garlic (minced)
4 carrots (diced)
1 medium zucchini(diced)
2 medium tomatoes (diced) 
3 cups of kale (chopped)
1 can of chickpeas (rinsed and drained)
1 can of cannellini beans (rinsed and drained) 
6 cups of veggie broth 
1-2 cups of water 
1 tsp paprika 
1 tsp garlic powder
Salt and pepper to taste 
-Sauté onion in some olive oil 
-Add in other veggies (aside from kale and tomatoes and cook until fragrant 
-Add in broth and water and bring to a boil 
-Lower you heat, add in beans, tomatoes, kale and seasoning 
-Simmer for at least one hour
-Salt and pepper to taste 
-Cook your @keenonequinoa cup according to the package 
-Add a scoop to your soup and enjoy!!
